These simple balls are my little man’s and my Mums current favourite snack. I made them in response to a request from one of our lovely readers and we think they are perfect for the festive season! I hope you like them.
Ginger Balls
1 cup medjool dates, seeds removed
1 cup raw cashews
1 tablespoon ground ginger
1/2 teaspoon concentrated natural vanilla extract
pinch of salt
1/4 cup of desiccated coconut to roll the balls in
Place the ingredients into your blender or food processor and blend until it is coming together. Roll into balls. Roll in the coconut. Place in the fridge to set. Enjoy.
