Christmas Day, 12 months ago, I had no idea Wholefood Simply would ever exist. The thought had not crossed my mind. It had been a rough year and by the 25th of December we were all just thankful to stop, to breathe, to let it go.
I had seldom read websites or followed facebook pages. My computer skills were limited to say the least. When my cousin suggested I start a blog I thought he was crazy and left the conversation at that. However, the seed had been planted. Early on in the year Wholefood Simply was born.
I have generous hearts and clever minds to thank for guiding me through such foreign territory. I continue to know so little about this world that I have found myself in, but I learn more everyday and I am loving the journey.
The highlight of this experience is, without question, meeting you all, hearing your stories, and bringing a tiny piece of edible joy to those with dietary or time restrictions. I cannot thank you enough for the support and friendliness that you give. Without you Wholefood Simply would cease to exist and I would not be living my dream. Thank you for a wonderful year, I look forward to everything that 2014 has in store for us.

Peppermint Fudge
1 cup raw cashews
1 cup desiccated coconut
1/2 teaspoon natural peppermint extract
3 tablespoons honey
Blend the cashews and coconut until you have a smooth, thick paste. Add the honey, quickly combine. Add the peppermint extract, quickly combine. Press the mixture into a small container lined with baking paper over hanging the sides. Place in the fridge to set. Enjoy.
