Quick and Easy Lime Tarts
the base
- 6 tablespoons almond butter
- 2 tablespoons honey*
- 2 tablespoons coconut oil
- pinch of salt
the top
- flesh 1 ripe avocado, roughly chopped (approximately 180 grams)
- 2 tablespoons honey*
- 2 tablespoons coconut oil, soft
- juice and zest 1 lime
- Place the base ingredients into your processor and blend until the mixture is smooth and well combined. Spoon the mixture evenly into the holes of a mini silicon muffin mould, half filling each mould, and place in the freezer while you make the top.
- Place the ingredients for the top layer into your processor and blend until the mixture is smooth and well combined. Spoon the mixture over your base and place in the freezer to set and to store.
- Eat and enjoy.
*you can use rice malt syrup if you prefer.
