High Protein Salted Caramel Slice
Base
- 1/2 cup almond meal
- 1 cup desiccated coconut
- 3 tablespoons cacao or cocoa powder
- 2 tablespoons honey
- 2 tablespoons peanut butter
- 1 teaspoon vanilla extract
- pinch of salt
Middle
- 12 medjool dates, seeds removed
- 2 tablespoons maple syrup
- 2 tablespoons cashew butter
- 1/2 cup vanilla protein powder
- 2 tablespoons coconut cream
- 2 tablespoons coconut oil, liquid
- 1 teaspoon vanilla extract
- pinch of salt
Top
- 4 tablespoons cacao or cocoa powder
- 2 tablespoons coconut oil, liquid
- 2 tablespoons maple syrup
- 1 tablespoon peanut butter
- Line a loaf tin with baking paper overhanging the sides. Mine measures 19.5cm x 9.5cm.
- Place the base ingredients into your processor and blend to combine. Press the base firmly into your prepared tin and set aside.
- Place the ingredients for the middle layer into your processor and blend until the mixture is well combined. Spoon the mixture over your base and level the top.
- Place the ingredients for the top layer into a small bowl and mix to combine. Spread the chocolate evenly over the base.
- Place the slice into the freezer to set.
- Slice. Serve. Eat and enjoy.
