I am going a little chai crazy….and a little cake crazy… .and really, really Bliss Ball crazy. So one, or a combination of those three, might be all you are seeing from me over the next week or two. I hope you love those three things as much as I do. If not, there is another four hundred or so recipes on the site that can hopefully distract you until my next fad kicks in.
Spicy Chai Cookies
- 1 cup dry roasted almonds
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon cardamon
- 1/4 teaspoon all spice
- 1/2 teaspoon concentrated natural vanilla extract
- pinch of salt
- 10 medjool dates, seeds removed
Preheat your oven to 175°C or 350°F. Line a tray with baking paper.
Place the almonds and spices into your processor and blend at high speed until they resemble a flour consistency. Add the remaining ingredients and blend until the mixture resembles a fine, sticky crumb. Use your hands to press and shape the mixture into balls. Place the balls onto your prepared tray and use a fork to gently flatten them.
Bake for 12 minutes or until golden. Remove from the oven and cool on the tray for 10 minutes before gently transferring to a cooling rack to cool completely.
Serve. Eat. Enjoy.
