The following recipe encompasses all that I stand for; wholefoods, simplicity, deliciousness. It doesn’t get any easier or my versatile then this.
My kids love it, I love it, and visitors love it. We have Banana Nut Wrap Up’s for breakfast, lunch, desserts and snacks. Best of all there is a modified version to suit everyone.
Babies under one – mash together banana and tahini for an instant meal.
The peanut butter addicted two year old – substitute natural peanut butter for the almond butter.
Need to strictly avoid nuts and traces of nuts? Swap the nut butter for dates, coconut, or both; we think this combination is divine.
No nut or seed butters in the house? Go with the above or use whole nuts or seeds. I have had this with walnuts in place of the almond butter many times and it is lovely. Let me know what variations you try and the one that rates as your favorite.
Banana Nut Wrap Up
1 banana, halved
2 – 4 large cos lettuce leaves
2 tablespoons of roasted almond butter
Spread the almond butter generously over the lettuce, place one half of the banana in the centre and wrap it up. Repeat and enjoy!
