This recipe is ticking all of my boxes. Best of all the whole family loves it. It is not only gobbled up without complaint but everyone asks for more.
Maple Walnuts and Pear Salad
1/4 cup walnuts
2 rounded teaspoons coconut oil
2 teaspoons maple syrup
pinch of salt
1 pear, sliced
1 handful spinach leaves
generous squeeze of lemon juice
Heat a small to medium sized fry pan over medium to high heat. Add the walnuts and toss for 5 minutes or until fragrant. Turn off the heat and add the coconut oil, maple syrup and salt. Stir to coat the walnuts.
Place the spinach on your plate, add the pear, drizzle over the lemon juice. Add the walnuts and all of the coconut oil mixture.
Serve. Eat. Enjoy.
The quantities specified above are either one serve for me or enough for my two little ones. When I am making this for the four of us I double the recipe.
This salad is divine exactly as it is and also works perfectly with feta, chicken or fish.
