I am capturing today exactly as it is. I want to look back on this moment in years to come and say, “Remember how grand it was, weren’t those days the best?”
I wake early. My husband is grumpily dawdling to the shower. Some days I run, some days I rest. By 6am I am in the kitchen. My little girl sits across from me, reading her book, currently ‘The Wizard of Oz.’ Lu pours the drinks and I get the breakfast, Gav opens the blinds. We can all hear you chatting away in your cot.
I get you up. You give me a toasty warm kiss and cuddle. You talk about Spider Man and I tell you what we are having for breakfast and our plans for the day. Lu is beside us sharing the exciting things she will be getting up to at school.
We return to the breakfast bench and kiss Dad goodbye.
I make the lunches as you two munch away and ramble on. It is always a time filled with happy sounds. I am sure you miss each other overnight.
Lu, she is such a treasure, gets straight onto her jobs. Chatting the entire time. Together you unpack the dishwasher. Then it is off to Lu’s room. The music is turned on. Lu gets into her uniform and comes out to me so I can do up her tie. Together you open the blinds and pack her lunch into her bag. I potter around, do a little washing and head up to my room to race through the shower with my two little people following behind. I can hear you both nattering away in my room and rummaging through my wardrobe.
We drive Lu to school and watch those gorgeous little legs and that glowing face run up the path with a bag almost half her size. My heart melts every time.
We return home. We cook. We read countless Spider Man books and lately we have bravely been eating all of Dad’s bananas.
You sit on the bench as I chop and stir. You pass the ingredients and lick my fingers. You tell me that you love it all.
You head outside; play around with the neighbour’s cat and anything else that you can find.
You come in wet, grotty and happy.
Together we have lunch.
You sleep. Often I have to wake you. Again, I feel your heavy, warm, loving body draped over my shoulder. You wake happily, excited, you love picking up Lulu.
Lu runs to the car and I tell her she is beautiful and she tells me all about her day. You pass her the dried apricot that you have saved for her.
Minutes later we are home. Back at our breakfast bench. I start thinking about dinner. Lu changes her clothes, you unpack her bag. Homework begins. Together Lu and I work it out while you play.
Bath time. Currently that involves lots of straws and bubble blowing,
Free time. You two grab a drink and a bowl of veggies and jump on the couch, next to each other, happily awaiting Dad’s arrival.
Here he is.
I continue to potter in the kitchen as the three of you dance around the lounge room in anticipation of your favourite show.
Dinner.
You sit with us now! It is lovely to have you joining us at last! You play the clown. Lu eats her dinner perfectly and always asks for dessert.
We spend the time all talking about Lu’s school day. Dissecting it. All of us interested in different bits.
You two play a little more until Dad starts cleaning up.
I round you both up to get your teeth brushed, to have a story before you take the rubbish outside with Dad and to check out the stars and the moon.
You both return with a full report and give everyone a kiss.
We head to your room, get your PJ’s on and sit in the chair beside your cot.
You always say “We chat Mummy?” We always do.
Lu and Dad read together and moments later the house is quiet. My babies are sleeping. My day is done and I look forward to waking up and doing it all again tomorrow.
Raspberry and Coconut Tart
base
- 1 cup desiccated coconut
- 1 cup raw macadamias
- pinch of salt
- Place the ingredients into your food processor and pulse at high speed, scrapping down the sides as necessary, until the nuts and coconut have completely broken down and your mixture resembles a thick paste that sticks together. Gently press the mixture into the base of an 18cm spring form pan and place it into the freezer to set.
middle
- 2 cups of frozen raspberries
- 2 tablespoons honey
- 2 tablespoons coconut oil
- Place the ingredients into your food processor and blend at high speed until the mixture is smooth, resembling a thick raspberry sorbet. Spoon the mixture evenly over your base. Level the top with the back of a spoon. Place in the freezer to set.
top (optional)
- 30 grams dark chocolate, melted
- Leave the tart in the freezer for 2 – 3 hours. Remove from the freezer and, using a teaspoon, drizzle with the melted chocolate. Serve. Eat. Enjoy.
Alternatively you can return the choc drizzled tart to the freezer, sliced or unsliced. Remove from the freezer 15 minutes prior to serving.
If I am just making this for us and not for a special occasion then I keep it stored in pre-cut individual portions which we then eat straight from the freezer whenever we desire.
