4 Ingredient Raspberry Chocolates

So we are doing this crazy little thing called moving.

We are doing this crazy little thing called trying to sell our house while three little people do what little people do and pull out everything we put away.

We are doing this crazy little thing called resigning from our primary source of income.

We are doing this crazy little thing called taking a risk to get back home, to family and life-long friends.

We are doing this crazy little thing called buying a house interstate that we have only seen once, is the only house we have seen and is in an area somewhat unknown to us.

We are doing this crazy little thing called bringing out a few new Wholefood Simply products while we juggle the above.

We are doing this crazy little thing called insomnia.

We are doing this crazy little thing called stress.

We are doing this crazy little thing called far too many balls in the air.

But we are doing all of these crazy little things because we believe it will all be worth it, because we believe that doing a few hard yards now will pay off in the not too distant future.

We are doing all of these crazy little things because we believe we will laugh louder and love more and that this will flow on to our children.

So here’s to crazy little things!


4 Ingredient Raspberry Chocolates

  • 1 cup frozen raspberries
  • 5 medjool dates, seeds removed

the chocolate

  • 150 grams 85% dark chocolate, melted
  • 3 tablespoons honey*
  1. Place the raspberries and dates into your processor and blend until the raspberries are crushed and the mixture is combined.
  2. Mix the melted chocolate and honey until the smooth and well combined.
  3. Spoon the chocolate mixture into the base and sides of three muffin holes, add a spoon of the raspberry mixture  to the centre, press it gently down and cover with chocolate. Repeat this process until you have filled all 12 holes.
  4. Place the chocolates into the fridge to set and store. 

*you can use rice malt syrup if you prefer.

notes – ensure the raspberry filling is enclosed within the chocolate otherwise it will ooze out. Still delicious, just a little messy.

    Yep, a whole lot of crazy things going on in your lives right now, but these chocolates will definitely help everyone feel less crazy! how you have time to think them up and make them, amidst all the craziness, is beyond me, but thank you anyway! It’s nice to be receiving posts again, I haven’t had one for a while. I’m sorry I wasn’t well on Juliet’s Birthday, to email you congratulations, so I hope you got my card. One year old already! xx

The kids did receive a beautiful parcel from you and it kept them occupied for a very long time! I am sorry I thought Lu had replied, I should have also. I won’t give excuses, you know how chaotic it has been and I am hopeless at the best of times. It is only two more sleeps until we move! I can’t believe it!!
