Four Ingredient Carrot Cake Bliss Balls
- 1 cup dry roasted cashews
- 1 cup desiccated coconut
- 12 medjool dates, seeds removed
- 1 carrot, roughly chopped (60 – 80 grams)
- Place the ingredients into your processor and blend at high speed until the mixture is broken down and resembling a sticky crumb. Use your hands to press and shape the mixture into balls. Roll in desiccated coconut if desired and place into the fridge or freezer to set and to store.
- Eat and enjoy.

Hi Bianca,
I have kids with mega allergies and love your site. I’m wondering if you can suggest what I can use instead of cashews in your recipes, as one of mine has a low level allergy to cashews and peanuts. Thanks heaps!

I have used raisins instead, I can’t tolerate dates either.
They work quite well, and no need for soaking.
