Vanilla Ice Cream

vanilla-ice-cream

When I first heard your perfect name and first saw your perfect face, I knew I wanted to mark your existence. I knew I wanted to do something to say the world is now a better place because you are in it.

At first I thought I would send your Mum a gift. Something to say congratulations. Something to say I am thinking of you both.

However, it has been many years since I saw your Mum, since we knew each other inside out and no matter what ideas came into my mind none of them seemed right.

So I decided instead to give you my words.

I wanted to tell you how special your Mum was and consequently will always be to me.

I wanted to tell you that I was a lost little girl. Never knowing what it felt like to belong, always trying to fit, always trying to be who I thought others wanted me to be.

But not with your Mum.

Your Mum not only accepted me, with my countless faults and flaws, but she loved me exactly as I was. She was familiar and comfortable and genuine.

She was friendship in its finest form.

She was wise beyond her years. She was intelligence and laughter and all things beautiful.

I remember the sleep overs I had at her house. I don’t remember what we did, I don’t remember what I ate or where I slept. I remember how homely it felt being there. How inviting and welcoming. As if the walls had only ever known love and happiness and this oozed from them.

I’m telling you this, precious little one, because I think you have found yourself an amazing mother.

She will teach you the importance of friendship and integrity, worldliness and compassion, values and respect.

But mostly she will love you unconditionally.

You will know it when she looks at you and when you hear her speak your name.

You will feel it in your home and you will feel it in your heart.

I’m so glad you two have found each other. I wish you both a lifetime overflowing with happiness.

Vanilla Ice Cream

  • 300ml double cream
  • 1 heaped tablespoon honey
  • 1 teaspoon concentrated natural vanilla extract
  1. Place the ingredients into a small to medium sized bowl. Use hand beaters to whip for around 20 seconds or until well combined and resembling whipped cream. Place into a small air tight container. Freeze for a minimum of 3 hours. Enjoy!

*if the ice cream has been in the freezer for more then six hours you will find you need to cut it with a knife. However, it is still a crazy level of delicious and we have ours in the freezer for many days and still throughly enjoy it.
