Is it just us or do many families have days when everyone is cranky?

Here’s a glimpse into my home today.

I was unwell overnight and barely slept. I eventually crashed an hour before I woke to my husband getting ready for work.

I was up and feeling shocking for about ten minutes when my little-miss-usually-delightful-seven-year-old decided she was in the mood to cause trouble.

Perhaps she didn’t sleep well either!

So it began.

She was ranting, I was raving.

It was no way to start a day!

The morning seemed to drag on in this manner for an exceptionally long time. I suspect I was just too tired to turn things around. Finally it was 8:30am and time to head to school.

I felt physically and mentally flat all day. I don’t like fighting with anyone, but I especially don’t like it when it is those I love the most. I knew that had I been feeling well I would have handled the start to our day much better than I did and I was disappointed with myself.

I picked my baby girl up from school and I said sorry, she said sorry and we were fine. Just fine, nothing better than that.

Moments before dinner my Husband arrived home. He’d had yet another long day. I could see before a word had been spoken that his day was no brighter than mine.

Typically my Daughter and I sit together and read at night once my Son is in bed and as my Husband continues working. It is our favourite time of the day.

However, it was decided after our crazy morning that it wouldn’t be happening tonight, so she gave me a kiss and went off to bed.

I’m missing her.

My Husband is at the other end of the house working.

I’m lying here, exhausted, hoping that tomorrow is better and feeling all too responsible for how today has panned out for us all.

Such is life as a Mum.


Top Deck Cake
vanilla cake

  • 1/2 cup coconut flour
  • 1/4 cup honey*
  • 2 tablespoons coconut oil
  • 1/4 cup coconut cream
  • 3 eggs
  • 1/2 teaspoon concentrated natural vanilla extract
  • 1/4 teaspoon baking powder
  • pinch of salt
  1. Preheat your oven to 175°C or 350°F. Grease and line two loaf tins with baking paper. Mine measure 19.5cm x 9.5cm.
  2. Place the ingredients into your food processor and blend until well combined.
  3. Spoon the into one of the prepared tins and pat down the top with the back of a spoon.

the chocolate layer

  • 1/2 cup coconut flour
  • 1/4 cup honey*
  • 1 tablespoon cacao or cocoa
  • 2 tablespoons coconut oil
  • 1/4 cup coconut cream
  • 3 eggs
  • 1/2 teaspoon concentrated natural vanilla extract
  • 1/4 teaspoon baking powder
  • pinch of salt
  1. Place the ingredients into your food processor and blend until well combined.
  2. Spoon the into the remaining prepared tin and pat down the top with the back of a spoon.
  3. Bake the cakes for 35 minutes.
  4. Remove from the oven and cool in the tin for 5 minutes before gently transferring to a cooling rack to cool completely.
  5. Once the cakes are completely cooled you can make the ganache.

Chocolate Ganache

  • 100 grams dark chocolate, roughly broken**
  • 2 tablespoons coconut cream
  • 2 tablespoons honey*
  1. Place the chocolate into a medium sized heat proof bowl and gently melt.
  2. Remove from the heat.
  3. Add the coconut cream and honey and mix until the mixture is well combined.
  4. Spread the mixture over the top of one of you cakes and top with the remaining cake.
  5. Spread the ganache over the top and sides of the cake.
  6. I didn’t apply the ganache to the end of the cake. If you are wanting to you may need to make extra.
  7. I store the cake in the fridge or  you can slice, serve and enjoy as soon as the ganache is applied.

*you can use rice malt syrup if you prefer.
**If you would rather not use dark chocolate you can use this delicious recipe for the ganache. You may need to pop it into the fridge briefly before applying to the cake.
