My daughter has completed her first year of school! I have missed her! I have watched her change from my innocent baby to a little girl, it has been both delightful and devastating! Why must they change so quickly? I feel as though my memory cannot keep up! There have been many occasions, many moments, that I was certain I would never forget, but I have.
Last Saturday night my husband went out for dinner. I stayed home with the kids and we got the photo albums out. I was shocked to see how much my son looks like his sister, he kept looking at her baby photos saying ‘me, me’, Lu and I laughed. At the time I was sure I would never forget what my precious first baby looked like, her excited toddler face, the haircuts, the favourite toys; but I have forgotten much of it.
There is a great deal of food associated with the end of the school year and the festive season, often parents are asked to bring a plate. I seldom know what to take. I know that the way my family eats may not appeal to the majority of children and families. There is also allergies and intolerances to consider. On top of this I factor in expense with regards to both time and money. This year I am very happy with the answer we came up with. I hope they work just as well for you.

School Snacks

10 medjool dates, seeds removed

1/2 cup raisins

1 cup rolled oats

1 tablespoon cacao or cocoa or carob

1/2 teaspoon concentrated natural vanilla extract

pinch of salt

coconut for rolling in

Place the ingredients into your food processor or high speed blender. Process until the nixture sticks together, be patient, this takes a little while and the mixture will be crumbly before it all comes together. Press the mixture into balls and roll in coconut. Place in the fridge to firm up a little. Enjoy.

*if they are not coming together you can add a tablespoon of coconut cream.
