School Cookies

My kids have been sick this week. My little boy has been sobbing ‘Mumma’ and hanging out on my hip. My little girl has been worn out, unhappy and wanting her vibrant self back. I have been completely exhausted! Thank goodness my amazing Mother is here looking after us and, as always, my robust and resilient man is keeping the wheels turning.
There are some incredible Mothers and Fathers out there, caring for their sick babies’ day in and day out. I understand that they do not have a choice, but still the strength inside them is admirable. I cannot imagine the pain of it, the constant heartbreak and the desperation. I will be completely honest and say that I find it hard enough dealing with common, low grade illnesses. I dare not imagine the load that some families have been forced to carry.
It has left me imagining a world without illness, a world where we all wake feeling fresh and revitalised each day. A world where personalities are not clouded by ill health, medications  or food intolerances and a world where parents do not have to see their little ones suffer.
What a fine world this would be!

 School Cookies

1/2 cup hulled tahini

6 medjool dates, seeds removed

1/2 cup rolled oats

Preheat your oven to 175 degrees Celsius or 350 degrees Fahrenheit. Line a tray with baking paper.

Place the ingredients into the blender or food processor, quickly pulse to combine. Using damp hands shape the mixture into cookies. Place on the tray and bake for 12 minutes.  Remove from the oven and allow to cool. Enjoy!
