Raspberry and coconut porridge

All my life I have said to my Dad, “What would you like for your birthday?”

All my life my Dad has replied “Just a card”.

Perhaps I didn’t understand this as a child. Perhaps I thought it was absurd, that everyone must want something. That he simply had to have a gift for his special day.

But somewhere along the line I must have grown up, because these days I am very much a card girl.

The most wonderful gift that I have ever received was packaged in a red envelope and signed with my husband’s name.

He has given me many fabulous things over our years together. Everything from my favourite books and CDs to my favourite clothes and jewels.

But the best present of all, the one that made me smile from the inside out and well beyond the moment I first received it, was a card that said I’m his best friend.

A card that said we belong together.

A card that said our Christmas’ are the greatest of days.

A card that said let’s do this forever.

My husband is not the type of guy who walks around singing my praises or declaring his love for me. As much as I adore him he would not be described as affectionate or emotional.

He is very much a blokey bloke. A footy watching, beer drinking, Aussie bloke.

Perhaps that is why his card left tears streaming down my face.

Or perhaps the tears were because we’d had a hard year. An emotionally draining and exhausting year, for my husband even more so than me. At times we had become disconnected. At times I had questioned who I was to him. The words within this card were exactly what I needed to here and I thank him for giving them to me.


 Raspberry and Coconut Summer Porridge

  • 1 cup coconut milk
  • 1/2 cup water
  • 1 cup raspberries (frozen is fine)
  • 5 medjool dates, seeds removed
  • 1/2 teaspoon concentrated natural vanilla extract
  • pinch of salt
  • 1/3 cup chia seeds
  • raspberries and desiccated coconut to serve, optional
  1. Place all of the ingredients except for the chia seeds into your food processor and blend until smooth and well combined.
  2. Pour the mixture into a medium sized bowl.
  3. Sprinkle over the chia seeds and whisk to combine.
  4. Place in the fridge for several hours or overnight to thicken.
  5. Serve with raspberries and coconut if desired.
  6. Enjoy.
