Raspberry Bliss Balls

In my mind it started with the form. Unbeknown to me at the time most people fill the form out something like this –

Elise, 6, loves to draw and read.

Eamon, 2, loves Spiderman and his big sister.

My form, however, sounded a little more like this –

Elise, 6. Intelligent, delightful, compassionate. The little girl who brings sunshine to my darkest days.

Eamon, 2. Affectionate, loving, humorous. The little boy who taught me to dance to the beat of my own drum.

Gav. Younger than he feels. Sensible, practical, organised. The one who packs the jackets and checks the locks.

Me. I am old, I am young. I am built on all of the above. I nourish their bellies, nurture their minds and hold their hearts. Without them I’m just a lady, standing at my stove without a story to tell.

Well, it was a few years ago now so they are not my exact words but you get the gist of it.

That is how we first met.

I told her about us, I filled in her form. I hit submit and anxiously waited to hear when she could take our family photos, a Christmas gift from my parents. 

If you asked me all those years ago who she was I would have said “Our photographer, the lady who took those amazing pics, the lady who makes me look much better than I really do”.

But Andrea is so much more than that.

She is the incredible woman who brings out and captures my children’s genuine smile. The one that reaches their eyes and comes from the heart.

She is the lady with who we all instantly feel warm and relaxed. She is kindness and friendship, she is talent and care. She is much more than an amazing woman standing behind a camera.

I’m so glad that form led to us meeting.

Not just because you capture our family perfectly and have given me images I will treasure for a lifetime. Images I look at and think “Yes, that is us. Right now. Right at this moment, that is all of who we are, together and on our own”. But also because I now say “The ever beautiful Andrea? She is our exceptional family photographer and my lovely, lovely friend.’

 Raspberry Bliss Balls

  • 1 cup frozen raspberries
  • 10 medjool dates, seeds removed
  • 1 cup raw cashews
  • 2 cups desiccated coconut
  • 1 teaspoon vanilla extract
  • pinch of salt
  1. Place the ingredients into your food processor and pulse at high speed until the mixture is broken down, well combined and sticking together. Use your hands to shape the mixture into balls.
  2. Either leave the balls as they are or roll in coconut or cacao or cocoa or drizzle with melted dark chocolate. Place in the fridge to set.
  3. Eat and enjoy.
