Peanut Butter Cups

My two year old son has a little sore on his ankle, I am assuming it is from his new sandals. I have attempted putting a band aid on it purely while he has his shoes on. This completely freaks him out! He sits on the ground crying ‘ow, ow, ow’ and holding his foot until I take it off. He then breathes a sigh of relief and gets on with his day. The sore itself isn’t bothering him at all. I recall my daughter having a similar response to her first band aid experience.
However, something drastic seems to happen between the ages of two and four that takes band aids from being terrifying and invasive to being the coolest thing ever!! My daughter, who is now six, loves band aids. She wants band aids for bruises, band aids for headaches and is even excited by the idea of her brother getting one.
I always remember my Aunty telling me how she gave her kids a box of band aids each at Christmas when they were young. They were their very own band aids to use as ruthlessly as they liked. My Lu would love this!
Another thing that my little man finds very disturbing is the sticky texture of peanut butter, he will not stand for it. But our peanut butter cups, straight from the freezer, he absolutely loves. Perhaps I will give him one next time I attempt to cover his sore with a strange, sticky, plastic strip.


Peanut Butter Cups

  • 5 tablespoons of natural peanut butter*
  • 5 medjool dates, seeds removed**
  • 1/2 teaspoon concentrated natural vanilla extract
  • pinch of salt
  1. Place the ingredients into your food processor or blender.
  2. Pulse until well combined.
  3. Press the mixture into a silicon mini muffin mould.
  4. Put in the freezer to set and to store.
  5. Eat and enjoy.

* you can sub the peanut butter with almond butter. For a nut free version use 4 tablespoons of hulled tahini and an extra medjool date.

**I store them at room temperature and if they feel dry I briefly soak them in boiling water and strain prior to making the cups.
