Not Quite Top Deck
the vanilla

  • 1 cup cashews
  • 3 tablespoons coconut cream
  • 2 tablespoons honey*
  • 3 tablespoons coconut oil
  • 1 teaspoon vanilla extract

the chocoalte

  • 100 grams 90% dark chocolate, melted
  • 2 tablespoons honey*
  • 1 tablespoon cashew butter
  1. Place the cashews into a bowl and cover with water while you gather your ingredients and line you tin. I used a 20=cm square tin lined with baking paper over the sides for easy removal. You can also use a silicon loaf tin or mini silicon muffin moulds.
  2. Strain the cashews and place them into your processor. Blend until they are forming a paste. Add the remaining ingredients and blend until the mixture is smooth. Pour the mixture into your prepared tin, level it out and place it into the freezer.
  3. To make the chocolate mix the ingredients together until smooth and well combined. Pour the mixture over your vanilla layer and return to the freezer to set.
  4. Once set, slice, serve, eat and enjoy.

*you can use rice malt syrup if you prefer.
