The whole voting thing that I’ve had going on, the whole asking for your support each week, that’s been tricky for me. It has taken me out of my comfort zone and tonight I just wanted to say thank YOU!
I’ve been blown away by your kindness and support and I am lost for words grateful.
There is still a few weeks before voting closes with the competition, but regardless of the result I just wanted you to know that your time, your kind words and your encouragement has meant a lot to me!
In an attempt to show my gratitude and to say thank you, I made you a Hot Cross Bun Mug Cake! I hope you enjoy it!
Hot Cross Bun Mug Cake
- 2 tablespoons almond butter
- 2 tbs coconut cream
- 1 tablespoon honey*
- 1 tablespoon currants
- 1/4 tsp mixed spice
- 2 tablespoons almond meal
- 1 egg
- Place the ingredients into a bowl and mix until they are well combined. Spoon the mixture into a large mug or ramekin (the mixture will rise) and place in the microwave. Cook for 90 seconds – 2 minutes.
- Carefully remove from the microwave, allow to cool slightly and tuck in!
*you can use rice malt syrup if you prefer.
Note – drizzle with melted dark chocolate if desired.
