Quick and Easy Hot Cross Bun Mug Cake

The whole voting thing that I’ve had going on, the whole asking for your support each week, that’s been tricky for me. It has taken me out of my comfort zone and tonight I just wanted to say thank YOU!

I’ve been blown away by your kindness and support and I am lost for words grateful.

There is still a few weeks before voting closes with the competition, but regardless of the result I just wanted you to know that your time, your kind words and your encouragement has meant a lot to me!

In an attempt to show my gratitude and to say thank you, I made you a Hot Cross Bun Mug Cake! I hope you enjoy it!


Hot Cross Bun Mug Cake

  • 2 tablespoons almond butter
  • 2 tbs coconut cream
  • 1 tablespoon honey*
  • 1 tablespoon currants
  • 1/4 tsp mixed spice
  • 2 tablespoons almond meal
  • 1 egg
  1. Place the ingredients into a bowl and mix until they are well combined. Spoon the mixture into a large mug or ramekin (the mixture will rise) and place in the microwave. Cook for 90 seconds Р2 minutes. 
  2. Carefully remove from the microwave, allow to cool slightly and tuck in!

*you can use rice malt syrup if you prefer.

Note Рdrizzle with melted dark chocolate if desired.

    This sounds fabulous- if only I could get out of bed, I’d be having this for breakfast! I’ll just have to wait to teatime instead, haha! Sorry, dear Bianca, for some strange reason, the competition site wouldn’t let me vote….maybe because I’m in the UK not Australia? You looked SO beautiful, your chocolatey thingy looked amazing, and you came across really well. Fingers crossed for you. xx

      I made it at tea time and it was DELICIOUS! It makes quite a lot though, much more than would fit into any mug I have, so I mixed it in a glass pyrex bowl (about 6″ across), and cooked it in that.It needed almost 3 minutes, and next time (oh yes, there will be a lot of “next times”!), I’ll up the mixed spice. Thank you for another super easy, super quick and super scrummy recipe. xx

    If you don’t wish to use a microwave at what temperature and how long would you cook it in a fan forced oven?
