Crispy Crunchy Crackers

On Sundays my daughter has swimming lessons. I had always taken her, and when my little boy came along the three of us would go together. However we recently decided that it might work better for everyone if Dad and daughter went swimming and Mum and son stayed home.
My little man had a hard time coming to terms with this. It is very seldom, if ever, that he and his Sister are separated other than when she goes to school.
It has been a few weeks now since we made the change and he is coming around. He quickly realised that these mornings to ourselves meant a lot of taste testing and a great deal of time spent sitting on the ground with Mum feasting on all of his favourite foods.
We typically spend it creating a thing or two then overindulging on mangos and blueberries. Before lunch we head outside, hand in hand, for a walk if the weather permits. Dad often returns to a messy kitchen and a messy face. My daughter is always excited to see the treats waiting for her.
It was a little tricky for me to give up taking Lu to swimming. My daughter and I are rarely apart and that is how it has been since she blessed my world. However it has turned out fun for everyone and I think we all look forward to it. Dad loves getting out, often they grab a treat to bring home for lunch and he gets to swing by his favourite grog shop. Lu comes home to tasty surprises and the little boy has Mum all to himself. I get to mess up the kitchen without driving my husband crazy, it is a win win!
Last Sunday we made these crackers, my boy ate the entire batch…..I didn’t tell Lu.

Crispy Crunchy Crackers

1/2 cup coconut flour

1/2 cup chia seeds

2 tablespoons honey

3  tablespoons coconut oil

1 tablespoon cacao or cocoa or carob

1/2 teaspoon concentrated natural vanilla extract

pinch of salt

Preheat oven to 175 degrees Celsius or 350 degrees Fahrenheit

Put all ingredients into your blender or food processor in the order listed above, blend until combined. The mixture may not look like it is coming together but when you touch it you will see that it is sticky. Using damp hands I pile the mixture onto a sheet of baking paper, I smooth it over, place another sheet of baking paper on top and roll it out to my desired thickness. I remove the top sheet of baking paper, place the mixture on a tray and bake for 12 – 14 minutes. Allow to cool completely and snap into crackers. Enjoy.
These crackers are not especially sweet, and everyone who has tried our latest batch would categorise them as savoury. I hope you like them.
