Choc PB Cookie Dough Bliss Balls

Lately there has been stress, sleepless nights and frantic days. There has been problems, obstacles, challenges and confusion.

There has been hard times… not the hardest of times…but just everyday, Run of the Mill, Murphy’s Law, hard times.

And I have been acutely aware that my focus has needed to shift.

So today I am putting aside the things I cannot change and I am taking a moment to give thanks.

Thanks to the neighbour who has inundated the new kid with kindness. Thanks for her daughter who played with my children and her prompt and ever helpful responses to my endless questions.

Thanks to the childhood friend who is as lovely, bubbly and delightful as I recall. Who has given me time I am sure she doesn’t have and kindness, wisdom and compassion that I am beyond grateful for.

Thanks to the old friends who made the trek to our new place, ignored the chaos and had a cuppa and a chat.

Thanks to my beautiful Mum who has turned a blind eye to my rollercoaster of emotions. Who has listened, bought me treats that I can’t afford and who has cooked us dinners, helped with the baby and travelled back and forth just to be around.

Thanks to my old far away friend who hasn’t forgotten me. Oh how I miss your pretty face, your wise words and your comforting way.

Thanks to the lovely people who I see everyday at the shops and who are always so friendly.

And thanks for all the everyday things I sometimes fail to pay attention to: my able body, my warm bed, my nourishing foods and last but certainly not least, my precious little people. They wrap their arms around me whenever my tears fall and make me laugh when nobody else can.

So tonight when I lay there, defying sleep as I do, I am not going to let my mind go over our current troubles but instead I will take it for a walk through all that I have to be grateful for.


Choc PB Cookie Dough Bliss Balls

  • 4 tablespoons peanut butter
  • 2 tablespoons honey*
  • 1/4 cup cacao or cocoa
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1 cup almond meal

Place the peanut butter, honey, cacao or cocoa, vanilla and salt into a bowl and mix to combine. Add the almond meal and mix to combine. Use your hands to work the mixture into a dough. Shape the dough into balls and place the balls in the fridge to set.

Serve. Eat. Enjoy.

*you can use rice malt syrup if you prefer.
