Are you familiar with the little apricot and coconut squares you see in the shops? They are often in the health food aisle although I am unsure why. This is our version and it is much better! These little gems are perfect for lunch boxes and eating on the road, they do not contain nuts or any quickly melting ingredients. Our Apricot Bites are sweet and buttery, take minutes to make, use two readily available wholefood ingredients and are guaranteed to keep everyone happy. Instant, easy, deliciousness, this is what I love!
1 cup dried apricots
2 cups desiccated coconut
Add the ingredients to your blender or food processor. Blend, blend, blend! This takes a while to come together, you may need to use a high speed blender. Press the mixture into a lined loaf tin. Refrigerate to set. Once set chop into pieces and store in the fridge. Enjoy!
If you would like them a little sweeter add 1 tablespoon of honey.
If you do not think your blender or food processor will combine the mixture you can either soak the apricots in boiling water for 30 minutes prior to blending, or add some coconut milk while blending. These bites take longer than expected to come together, be patient, it is worth it. I can’t wait to hear what you think. We love them.
