4 Ingredient Quiche

4 ingredient quiche
I grew up in a tiny little place, I knew everyone and everyone knew me. I didn’t meet people, they had simply always been around. It was familiar, it was comfortable, it was everything I needed.
Many of the people who shared this town with me have gone on to do amazing things, to be amazing people and show amazing courage.
Today I’m thinking about one boy who is kicking goals and I suspect filling our home town with pride.
He was a little younger than me, his brother a little older. My last memory of the two of us together was when we were in our mid teens hanging out at a town party. Did he tell me then that he played the guitar? I think so but I could be wrong.
I always liked him, everyone did. He was lovely and funny and cute, what wasn’t to like?
I moved away and I didn’t hear much more about him or his brother until the wonderful world of Facebook led to us briefly chatting again.
This is when I discovered that this little kid from our little town was busy doing big, big things!
Yet, he still seems so humble, so real.
His career has led to him travelling the world, no doubt being loved and adored by many, to staying up late, to moving through time zones, to spending a great deal of the year away from his family.
It all fascinates me. This existence that is almost a direct opposite of my own.
Does he ever find living out of suitcases as tiring as I find being unable to sleep for any more than three hours at a time? While my days are filled with family, he seldom sees his. I expect his bedtime begins as mine ends. His world is full of people, so many people, and mine is consumed by two precious little beings  and another who I carry  inside. Typically, it is just us and thoughts that wander scarcely further than dinner and washing.
I hope you are loving the journey. All credit to you mate! You had a dream, and now it’s yours. You have the whole of the Western District cheering for you and grinning like kids when we say, ‘Yeah, I know him. We grew up together’ and when we watch your clips on youtube.

4 Ingredient Quiche

8 eggs

2/3 cup sliced pitted olives

2/3 cup sliced sun dried tomatoes

handful of parsley, finely chopped

Preheat your oven to 175 degrees Celsius or 350 degrees Fahrenheit.

Whisk your eggs until well combined and looking delicious. Mix through the remaining ingredients. Pour the mixture into a pie dish, my base measures 18.5cm. I have a fabulous non stick one that the quiche slides straight out of, depending on what you are using you may want to grease it first.

Bake for 20 – 25 minutes (I find 20 minutes works perfectly in my oven).

Allow to cool. Eat and enjoy.

I personally love this cold. I eat for breakfast, lunch, dinner and snacks. It takes me a minute to make and I find it both sustaining and satisfying. I hope you like it too.
